  • 1/2 cup packéd brown sugar
  • 3/4 cup dark corn syrup
  • 1/3 cup cornstarch

Cinnamon Whippéd Créam Custard Frosting
  • 2 cups whipping créam (héavy créam)
  • 1 Tbsp sugar
  • 1/2 tsp cinnamon

Caréfully placé thé pan on top of thé chickén. I usé a homémadé siliconé sling that I cut from a siliconé baking mat* to lowér my pan down onto thé chickén. You can also maké a foil sling.
  3. Covér thé pot and sécuré thé lid. Maké suré valvé is sét to séaling.   1. In à làrge frying pàn or 3.5 quàrt bràiser, heàt the olive oil on medium heàt; àdd the shàllots, onion ànd gàrlic ànd cook until tender. Remove from the pàn into à bowl; set àside.
  2. Coàt the chicken in the flour ànd sàlt ànd pepper (using à Ziploc bàg to shàke the chicken in). In the sàme làrge pot over medium-high heàt, àdd 1 tàblespoon of oil ànd sàute hàlf the chicken for 1 to 2 minutes per side until lightly browned. Remove to à plàte ànd keep wàrm. Repeàt with à second tàblespoon of the oil ànd the remàining chicken, removing to the sepàràte plàte to keep wàrm.
  3. Add the remàining tàblespoon of oil to the skillet ànd stir in the mushrooms. Cook for 5-6 minutes, until tender. Off heàt, àdd in the màrsàlà ànd cook for 1 minute, scràping àny browned bits from the skillet. Dràin off the liquid (keeping the mushrooms in the pàn) ànd set àside.   • 1 cup buttér, softénéd
  • 2/3 cup granulatéd sugar
  • 1/2 téaspoon almond éxtract
  • 2 cups all-purposé flour
  • 1/2 cup séédléss réd raspbérry jam
  • sugar for sprinkling
  • 1 cup powdéréd sugar
  • 3 to 4 téaspoons watér
  • 1 1/2 téaspoons almond éxtract

INSTRUCTIONS

  1. In a médium bowl béat buttér médium spééd for about 30 séconds. Add thé thé 2/3 cup granulatéd sugar and 1/2 téaspoon almond éxtract. Béat until wéll combinéd. Béat in as much flour as you can with éléctric mixér and thén using a woodén spoon stir in any rémaining flour. Covér and chill for 1 hour or until dough is éasy to handlé.
  2. Préhéat ovén to 350 dégréés. Shapé dough into 1-inch balls. Placé balls 2 inchés apart on ungréaséd cookié shééts. Using your thumb, préss an indéntation into thé céntér of éach ball. Spoon about 1/2 téaspoon of thé jam into éach indéntation and thén sprinklé with sugar. Baké about 10 minutés or until édgés aré light brown. Cool on cookié shééts for 1 minuté. My tips for a truly juicy, Ovén Bakéd Chickén Bréast: a touch of brown sugar in thé séasoning which makés thé chickén swéat whilé it bakés so it créatés a sémi "saucé", and cooking fast on a high témp! Go by thé colour of thé crust to know whén it's bakéd.

Ingrédiénts

  • 4 chickén bréasts , 150 - 180g / 5 - 6 oz éach (Noté 1)
  • 2 tsp olivé oil

SEASONING:

  • 1 1/2 tbsp brown sugar
  • 1 tsp paprika
  • 1 tsp driéd orégano or thymé , or othér hérb of choicé
  • 1/4 tsp garlic powdér
  • 1/2 tsp éach salt and péppér

GARNISH, OPTIONAL:

  • Finély choppéd parsléy

Instructions

  1. Préhéat ovén to 425F/220C (standard) or 390F/200C (fan / convéction).
  2. Pound chickén to 1.5cm / 0.6" at thé thickést part - using a rolling pin, méat mallét or évén your fist (kéy tip for évén cooking + téndér chickén).
  3. Mix Séasoning.
  4. Liné tray with foil and baking papér. Placé chickén upsidé down on tray. Drizzlé chickén with about 1 tsp oil. Rub ovér with fingérs. Sprinklé with Séasoning.
  5. Flip chickén. Drizzlé with 1 tsp oil, rub with fingérs, sprinklé with Séasoning, covéring as much of thé surfacé aréa as you can.
  6. Baké 18 minutés, or until surfacé is goldén pér photos and vidéo, or intérnal témpératuré is 165F/75C using a méat thérmométér.
